Lentil and sweet potato soup

Ingredients

1 cup red lentils – 1/2 onion, finely chopped – 2 cloves garlic, crushed – 1 stalk celery, finely chopped – 1/2 leek, finely chopped – 1 sweet potato, cubed – 1 cm ginger, grated – 1 teaspoon ground cumin – 1/2 teaspoon harissa – 1 teaspoon paprika – 1/2 teaspoon black pepper – 1 tablespoon canned tomatoes – 1.5 liters vegetable broth – salt – 2 tablespoons tablespoon of olive oil – 1 plain yogurt – fresh parsley

Preparation

Heat the oil in a large pot. Add the onion, leek, and celery, and sauté until soft. Add the lentils, sweet potato, garlic, ginger, cumin, paprika, black pepper, and canned tomatoes. Stir well. Then add the vegetable stock and harissa. Bring to a boil, then lower the heat and simmer for 40 minutes, until the lentils are tender. Season with salt and pepper. Serve with a spoonful of plain yogurt and sprinkle with fresh parsley.
