Gisèle-style potatoes

Ingredients

Place olive oil and coarse salt on a baking sheet. Take medium-sized, evenly sized potatoes, cut them in half lengthwise without peeling them, and place them cut-side down on the baking sheet. Sprinkle with fleur de sel and herbes de Provence. Bake at 180 degrees for about 30 to 45 minutes.
