Soil and Grape varieties


Terraces made of silt and sand located in Vacqueyras, Dentelles de Montmirail.
- Grenache (75 %).
- Mourvèdre (25%).


Cultivation Method


Vine age: hundred years old, means a low but qualitative production.
Vine training techniques of the Grenache : gobelet.
Vineyards conditions of the contract: soil maintenance, no chemical fertilizer.
Productivity: 35 hectolitres/hectare.



Elaboration


- Manual vine crop and meticulous sorting.
- Vatting of 15 days (temperature regulation, overpumping, and daily tasting.
- 12-18 months of elevage in concrete tank.
- No collage.
- Slightly filtration before bottling.


Tasting


Fruity very intense (blackcurrant), with long and supple tannins. Well balanced. On the palate : good harmony, good persistence.
To serve with :
- Filet mignon aux oignons confits.
- Magret de canard au vinaigre de framboise.
- Fromages fermiers.
Conservation : about 5-6 years.
