Vineyards made of limy sediments look to the south, mistral-sheltered, on Beaumes de Venise.
You can find oyster and ammonite fossils.

Manual vine crop and meticulous sorting : grapes must be at least 14.5°C.

Instant pressing of the grapes then debourbage and fermentation at low temperature (13-16°C).

During fermentation, there is an addition of 5 to 10% of neutral alcohol of vinic origin. It’s called “MUTAGE”.
This process allows stopping fermentation and thus keeping a great deal of sugar (110 g/l).

Sterile filtration before bottling on next spring.
Tasting
Sweet and natural wine which must be drinking fresh (7-9°C);
very complex fragrances of fruits and flowers; great elegance, well balanced.
To serve with :
- en apéritif, avec du melon, du foie gras.
- avec certains fromages forts type Roquefort, Picodon, Banon.
- sur les desserts : tartes mendiant, mousse aux abricots, desserts au chocolat (mocambo à la framboise).
This wine can be keeping several weeks on fridge once the bottle is opened.
Conservation : 10 years and more.
