Productivity : 22-30 hectolitres/hectare.

Elaboration

- Manual vine crop and meticulous sorting : grapes must be at least 14.5°C.
- Instant pressing of the grapes then debourbage and fermentation at low temperature (13-16°C).
- During fermentation, there is an addition of 5 to 10% of neutral alcohol of vinic origin. It’s called “MUTAGE”. This process allows stopping fermentation and thus keeping a great deal of sugar (110 g/l).
- Sterile filtration before bottling on next spring.
