Soil and Grape varieties


Soil made of limsestone and clay on Violès.
- Black Grenache (70 %).
- Carignan (30 %).


Cultivation method


Vine age : 40 years.
Vine training techniques : gobelet.
Vineyards conditions of the contract : soil maintenance and no chemical fertilizer.
Productivity : 45-55 hectolitres/hectare.



Elaboration


- Manual vine crop.
- Vatting (6-8 days) and control of fermentation temperatures.
- Elevage in tank (12 monts).
- Slightly filtration before bottling.

Tasting


Red wine at the same time fresh and fruity.
To serve with :
- Viandes grillées.
- Charcuterie.
- Pizzas.
Conservation : before 4 years.
