- Black Grenache (80 %).

Cultivation Method
Vine age : between 20 and 60 years.
Vine training techniques : gobelet and cordon training.
Vineyards conditions of the contract : soil maintenance, no chemical fertilizer.
Productivity : between 40 and 50 hectolitres/hectare.
Elaboration

Red grapes are picked off and pressed, then put in tank.
This maceration phase last 12 to 18 hours while the grape juice is colouring.

As the wished color granted, a part of the juice is taken to be decanted then fermented at low temperature (16°-18°C).
Witch is called the “SAIGNEE”.

No malolactic fermentation.

Sterile filtration before bottling on next spring.
