Mix of white Grenache (70%) and of Roussanne (30%) issued from two different soils:

Big shingles left by the Rhône during Quaternary mixed to red clay, which
accumulate sun heat and release it at night. Grapes reach a high degree of maturity, and concentrate with
the mistral (north wind).

Terraces made of silt and sand.
Cultivation method
Vine age : 30 years.
Vine training techniques : gobelet and cordon training.
Vineyards conditions of the contract : soil maintenance, no chemical fertilizer,
remove buds on spring.
Productivity : between 30 and 35 hectolitres/hectare.
Elaboration

Grapes are manually cropped and meticulously sorted, then put directly in a pneumatic press.

The juice ferments at low temperature and each grape variety is convert into wine separately
(tank for Grenache and oak barrel for Roussane).

Sterile filtration before bottling on next spring.
Tasting
Great wine, rare and complex, both flowered and fruity (hawthorn, stone-apricot, and toasted hints).
Round and rich on the palate, aniseed and mentholated hints give a nice freshness.
To serve with :
- Apéritif.
- Médaillon de lotte au safran.
- Sauté de veau a la provençale.
- Pintade aux morilles.
- Comté fruité, 18 mois d'affinage.
Can be drink young (within 2 years) or be kept several years (complex aromas of evolution, dry fruits, truffles,...).
